En ce matin de P\u00e2ques, le village ne s\u2019appartient plus, il appartient au march\u00e9. Entre les \u00e9tals de v\u00eatements des camelots et les produits de bouche, locaux et touristes se croisent dans un ballet incessant. L\u2019effervescence est totale. Les terrasses des bars, pleines \u00e0 craquer, d\u00e9bordent sur les all\u00e9es. On s&rsquo;y bouscule pour un caf\u00e9 pris au soleil, dans le brouhaha des conversations qui s&rsquo;animent. En arpentant les rangs, on navigue entre les couleurs vives des fruits de saison et les effluves de la charcuterie de pays. Les producteurs locaux tiennent leurs positions, fiers de porter haut l&rsquo;\u00e9tendard du circuit court. Soutenir l&rsquo;agriculture de proximit\u00e9 n&rsquo;est pas qu&rsquo;un slogan ici, c&rsquo;est une n\u00e9cessit\u00e9 capitale qui se lit sur les visages. Sous cette structure massive, le march\u00e9 couvert offre un refuge bienvenu. L&rsquo;air y est plus frais, charg\u00e9 d&rsquo;une humidit\u00e9 qui trahit la proximit\u00e9 de l&rsquo;eau. C\u2019est ici que l\u2019\u00e9tang de Thau livre ses tr\u00e9sors. Les hu\u00eetres, charnues et puissamment iod\u00e9es, s&rsquo;exposent sur les \u00e9tals, marquant leur diff\u00e9rence face aux lointaines cousines bretonnes ou atlantiques.
